From Strassen-Food To Schnitzel


The last phase of our trip takes us to Frankfurt, Germany, which is in Hessen, which is essentially situated in the heart of Germany. Both by virtue of geography and culture, the German diet is heavily influenced by Eastern European cuisine, where pork takes centre stage, as well as lightly sprinkled with inspiration from France to make some of the most pleasant white wines in the world (Riesling, and Gewurtztraminer, for example). In fact, the Rheingau, or the Rhine river valley nearby is where the majority of these wines are cultivated. If one could humanize Frankfurt, one would describe it as an “exhibitionist”, since as far as the eye can see, there are fairs, markets, and stands along the streets, showcasing something unique and special. Frankfurt also has one of the largest exhibition halls in the world, namely the Frankfurter Messe, where people from all over the world gather for an assortment of fairs and functions. What the inhabitants do best here, however, is take time out from the daily grind to sit, albeit in a rain storm, under tents set up on the street, and enjoy a glass of wine, Appelwoi (alcoholic apple cider), or beer, while chowing down heartily on a Wurst and Pommes (Wurst and Fries). Perhaps you have enjoyed such delights as hot dogs and fries here in North America, but one simply cannot compare the two: German goods are all hand-crafted with quality, and with tradition that dates back to hundreds of years. Although more recently, many rogue food stands have made their way into the German street food corral, if you have discerning senses. In case you require a photographic depiction, here are the effects of a good German street food experience!

Another major delicacy in Frankfurt is the “Frankfurter Schnitzel” which is accompanied by “Frankfurter Grüne Soße” or Green Sauce. Pork filets are thinly prepared, battered in bread crumbs and an egg and milk wash, then fried in oil or butter. Alongside the dish come fries or potatoes, a generous dollop of Sauerkraut, a side of white asparagus, and of course, the Grüne Soße. If you are curious about the ingredients of the latter, I’ve provided a general recipe from a German Hausefrau below, although I warn you that many of the ingredients are so inherent to the German garden that they may not be possible to find here (my apologies, but you will just have to take a trip to Frankfurt):

  • Petersilie (Parsley)
  • Schnittlauch (Chives)
  • Kerbel (Flat Leaf Parsley)
  • Sauerampfer (Sorrel)
  • Dill (Dill)
  • Borretsch (some type of Cucumber leaves, not found in North America – so substitute another herb)
  • Kresse (Alfalfa Sprouts/Watercress)
  • Estragon (Tarragon)
  • Liebstöckel (a spice similar to celery, so you can use dried celery)
  • Zitronenmelisse (Lemon Balm)
  • 2 Zwiebeln (2 Onions – finally something we all recognize)
  • 4 Eier, hartgekocht (4 eggs, hardboiled)
  • 1 Esslöffel Essig (1 Tablespoon vinegar)
  • 2 Esslöffel Öl (2 Tablespoons oil)
  • 1/4 Liter Schmand o. saure Sahne (250ml sour cream)
  • 150 Gramm Joghurt (1/2 cup yogurt)
  • 1 Prise Zucker (1 pinch sugar)
  • Salz (salt)
  • Pfeffer (pepper)

Use a food processor to finely grind all the herbs. Combine with remaining ingredients and mix well. Store in the fridge for  2-3 hours prior to serving. Guten Appetit!
